By now, we are quite busy with the fall harvest, taking care of winter vegetables, and preparing spring vegetables to survive the winter. And with many warmer days than usual, harvesting of summer vegetables such as eggplants, peppers, and okra is still ongoing.

This year we planted about 300.
Today we harvested about 100 (3 buckets). They are small but might be good for baked sweet potatoes.
They are muddy because of the rain, but I will not wash them because they will be stored for a long time.

Taro is still a trial digging and will be dug around the end of this month. Taro tastes best when it is freshly dug.

This year’s Hatchin persimmon crop is poor due to defoliation disease. The leaves and fruits at the tips of the persimmons have fallen off in drops.

Kakimoto (edible chrysanthemum) has long been eaten as an edible flower in Niigata. Ohitashi is the standard, but namasu is also delicious.

They are a treat during farm work, but if you are not careful, they will ripen and become a feast for ants. The small black ones are ants.
Winter Vegetable Care
Fertilizing and plowing of winter vegetables such as radishes, winter leeks, Chinese cabbage, cabbage, etc.
I quit mulching, so I am fighting with weeds.

They are growing while battling leaf-eating insects. They are small pests called daikon beetles, and they are stubborn ones that keep coming, whether you remove them or not.

Once the radishes finally escape the baptism of the daikon beetles, it is now time to fight the weeds.

Winter leeks eat the white parts, so cover them with soil as they grow.
Preparation of Spring Vegetables over Winter
Garlic, onions,fava beans, and peas are planted in the fall and will spend the winter under snow. There is just the right size to withstand the winter and neither large nor small will survive the winter. There is a time to sow.

The only thing sprouting now is garlic. Fava beans have just been sown, followed by onions and peas in November.

The best to see now are yellow jerusalem artichoke flowers, bright red chili peppers, and the nice smelling golden osmanthus.
