These blue astringent persimmons are fermented to make persimmon tannin. Cotton shirts dyed with this persimmon tannin feel great against the skin and are indispensable for summer farm work. It is also used as a preservative for wooden benches. In the past, there was more demand for preservatives than for food.
Autumn Harvest
Most of the persimmons are astringent with shochu, but we have tried dried persimmons, but the early winter in Niigata is very humid and they are attacked by mold. Recently, I have been having them made at my apartment in Tokyo.
